Mexican-Vietnamese cooking from two Callie cooks

They aren't related; gemelos means twins and they picked the name because everyone assumes they are. The food folds Vietnamese technique into Mexican forms, which sounds like a stunt and eats like something worked out over years of days off.

Nomar Ramirez and Nick Trinh both work at Callie in East Village, Ramirez on the line and Trinh on pasta. Both grew up in the Bay Area, and Gemelos opened at 3833 Mission Boulevard in Pacific Beach in March 2025.
