Sake, shochu and live jazz in Hillman City

Sake Noire opened in July 2026 on Rainier Ave S, started by people who came out of Hannyatou, the Fremont sake bar. The pours run from cloudy nigori to aged koshu, and there's shochu if sake isn't your thing.

The other half of the idea is jazz. Live sets several nights a week, played at a volume you can talk over, with Japanese-Italian small plates coming out of the kitchen. Sit at the bar and let the staff pick the bottle.

Vibes are strong! We had a sake flight and their twist on a manhattan. Then we tried the Hama Yama and The Egg Dish. Never had anything like either of them but the egg dish was probably my favorite! The service was attentive, informative, quick. Ambience is 10/10. A great spot for a date night! Will be coming back to try everything on their rotating seasonal menu. I also love that they educate you on their sake selection and the cultural components. Such a gem, can see it becoming a favorite.

Incredible food, service, and atmosphere! Every dish we tried was delectable, and you can tell the menu was crafted with love. A fantastic array of tastefully curated sake and drinks completes the picture! The sukiyaki à la osso buco was particularly exquisite✨

The food here is incredible! And you won't learn more about sake anywhere else. Highly recommend a visit for the fun cocktails and excellent menu.

Great experience! We went on a Friday evening, so it was pretty busy. The service was outstanding, especially considering there were only two people running the entire place. The food came out quickly and was very delicious. My only minor complaint is that I wish there was AC.
