Fish sauce martinis and durian, played straight

Fish sauce goes into the martini here. Durian gets worked into cocktails, and the house-made fruit wines use varieties that barely leave the Mekong Delta provinces where they're grown. Nothing about it feels like a gimmick.

The room is built to look like a wooden barge, lit gold. Some nights bring đờn ca tài tử, the Southern chamber music the Delta is known for. No other cocktail bar in Ho Chi Minh City is doing that.
