A Parisian bistro that leans Middle Eastern once the wine hits the table
Jakob Kristian Sørensen and Stine Ilona Eilertzen, who also run the pizzeria Il Locale, opened Marais bistro.bar on Guldsmedgade in January 2025. The menu reads French at first glance: falafel, shawarma and fried squid sit next to classic bistro plates, then the wine list pulls it toward the Middle East.
That list runs mostly natural, with bottles from Georgia and Lebanon next to French staples, and the bar makes its own cocktails and pours beer from small breweries. The room isn't built for formality; it works as a bar on its own just as easily as a place to sit down for dinner.

We had a fantastic dinner at MARAIS in Aarhus. The concept is a French–Middle Eastern fusion menu built around fresh, local ingredients, and everything we tried tasted amazing. We were a group of four and went for the menu, which turned into a really nice social eating experience: dishes kept arriving at the table, one after another, until we were completely full. It felt generous, relaxed, and perfect for sharing. The food was excellent across the board, but the falafel was genuinely outstanding — probably the best I have ever eaten. Crispy, flavorful, and perfectly balanced. The other dishes also had a great mix of freshness, richness, herbs, spices, and texture. Service was great as well: friendly, attentive, and very easygoing. The whole evening felt warm and uncomplicated, with the kind of food that makes you keep reaching for “just one more bite.” Highly recommended, especially for a group that enjoys sharing food and trying many different dishes.

The food was amazing. The pairing with three good wines from the wine menu definitely made it even better, along with really good and attentive service.

I had a fantastic experience at Marais bistro. The dishes were well-prepared and the good taste and good ingredients were clearly in focus. I got a selection of small dishes and it all tasted incredibly delicious and was served deliciously. The wine list at Marais bistro supported the food in the finest way. The service, food and atmosphere were top notch and I was almost completely high on a fantastic dining experience. We were a party of five and we all agreed that it was a dining experience that will be remembered and that comes in the top three of good restaurant experiences.

It was a very nice experience from start to finish! We shared some food and almost everything was perfect. The waiter was super friendly and gave us an amazing experience. The chef came to our table and shared some stories about the restaurant and answered our questions about the food. We ordered the Marais Gin Sour and after trying it, we ordered 4 more. We can really recommend this restaurant and will visit again, when we’re in Aarhus the next time!

Although we were very sad to see Kolo close its doors, we were very excited to try a new potential favorite spot in aarhus. The spaces feel familiar with an added dinning area at the bar. Unfortunately not the most confortable to sit in. Food options were limited but good. The calamari was exceptional, pastrami was a tad salty but still great and the meat was super flavorful. Anchovies were too fishy and had an odd flavor compared to what I’m use to getting back home in Spain. Service was efficient and the wine selection was quite impressive. Overall, nice experience for a yummy dinner in a casual environment. Would be great if the menu changed from time to time to taste new dishes!
