Italian cooking inside the restored Casa Velázquez
The chef behind Il Bacaretto runs Maialino inside a restored building architecture press covers under its historic name, Casa Velázquez. The provolone with honey comes up often in early reviews.
It takes reservations only. Valet parking runs from six on weekdays and noon on weekends, a sign of how much traffic it expects in a pedestrian neighborhood.

Five 5/5 plates, and I never touched the one dish the whole internet swears by. Maialino lives in the restored Casa Velázquez on Arzobispo Meriño, and Michele swore it was his favorite Italian in the city. He was not exaggerating. We rolled in with a huge table, turned it into a feast, and worked through a wine list with bottles from basically every corner of the planet. Start with the provolone and truffle honey. Just do it. 5/5, no notes. The Meriño pizza (prosciutto and stracciatella) came thin, crispy and nearly perfect, also 5/5, which is funny because every guide tells you to skip the pizza here. The guides are wrong. The artichokes were the only soft spot at 3/5. Then the pastas earned Michele’s whole reputation. Pork rib pasta, 5/5 and genuinely incredible. Gnocchi with shrimp, 5/5 (I’m allergic, so I’m trusting six very happy faces). Amatriciana, 4/5 with properly crispy bacon. The rib eye landed a clean 5/5, the sea bass in butter lemon a solid 4/5. Here’s the twist: every review and every AI insists the oxtail ravioli is THE move, and somehow I never ordered it. Five perfect plates without it. Go find out what I missed. Now the honest heads-up, because I care. Maialino runs slow. Genuinely slow. Starters took about 40 minutes, and the rest of the food another 40 after that. So treat the wine list as the main event for a while, and do not book this on a night with a hard stop. The narrow Zona Colonial streets also make parking a workout, so arrive on foot if you can. None of it dents the food, but walk in knowing the pace. 4.4 stars, only a few months open, already a neighborhood regular for a reason. The internet also begged me to stay for the tiramisu. I walked out for Greek yogurt instead. Next stop: Myka, right around the corner. Cheap or pricey, I don’t care. Only the best place to go.

We visited last night as a party of eight and spent over $USD600. While we appreciated that the owner acknowledged some of our concerns, the overall experience did not meet expectations. The restaurant was only about 60% full, yet the pacing and sequencing felt inconsistent. The meal took about 1.5 hours for roughly 10 courses, and dessert alone took approximately 20 minutes, even though the items did not appear to be baked to order. In a multi-course experience, timing, flow, and table management are critical. The food was very average and did not feel as elevated or gourmand-oriented as expected for the price point. As an example, a basic Milanese was served stringy, chewy, and cold. After an extended wait, this points to a lack of urgency in execution and raises concerns about kitchen organization and quality control. We had communicated our expectations ahead of time and also shared feedback during service. The owner did apologize, which we appreciated, but there was no meaningful service recovery after the meal was paid in full. We did not ask for anything to be compensated, but a proactive gesture would have helped. The biggest opportunity is leadership and floor presence. At times, the owner was not easily found, and when present, appeared distracted—spending extended periods on a cell phone while service was deteriorating. This contributed to missed service cues and a lack of coordination in the dining room. The server also seemed very new and clearly lost, including bringing dishes that were not ordered until late in the meal. That is not necessarily the server’s fault, but it does point to a need for better training, supervision, and support. There also seemed to be tension with another guest, which affected the atmosphere. In hospitality, calm leadership, active floor management, and guest recovery are basic expectations. I paid the full bill and am leaving this review to help the restaurant understand the experience from the guest’s perspective. This is not personal; it is neutral feedback based on what happened. The rating does not fully reflect what this experience deserved. I am choosing to frame it as an opportunity for the restaurant to improve. Please respect the industry and put in the effort this business requires. Hospitality is not about being the loudest voice in the room or trying to control the table through tone; it is about presence, care, execution, and genuine service recovery. If you are a tourist looking for a casual stop, this may work. However, if you are expecting a more elevated, well-paced dining experience, our visit did not reflect that. Overall, this review is offered constructively. The restaurant has an opportunity to improve pacing, food execution, dining room leadership, staff training, and guest recovery.

If I could give 10 stars, I would! Maialino serves some of the most delicious Italian food I’ve had in the Dominican Republic. Every dish was packed with flavor and clearly made with care. The drinks were just as impressive, they were well crafted, refreshing, and a great complement to the meal. The limoncello at the end of the meal was just as delicious, truly a standout, and a perfect way to wrap up such a great dining experience. What really stood out, though, was the staff. They were attentive, friendly, and made us feel genuinely welcome from the moment we arrived until the end of our dinner. It’s the kind of service that makes you want to come back again and again. The atmosphere in Zona Colonial adds even more charm, making it a perfect spot for a relaxed and memorable dining experience. I highly recommend this place to anyone looking for authentic Italian cuisine in a beautiful setting with amazing staff!

An absolute gem. The ambiance is stylish and intimate, with a level of elegance that feels effortless. The food is fresh, simple, and high-quality—every dish is clean, well-executed, and full of flavor without trying too hard. Cocktails are creative and different in the best way, with a strong attention to detail. Perfect spot for a classy night out and a great overall experience. Highly recommended.

⸻ I had an amazing experience at this restaurant in the Colonial Zone. Everything we tried was absolutely delicious. The oxtail ravioli was outstanding, the mushroom risotto was full of flavor and perfectly cooked, and the pork pasta was simply fabulous. The desserts were just as impressive. The flan was incredibly rich and creamy, and the tiramisu was so good that we didn’t even have time to take a photo. The service truly made the experience even better. The waiters and the manager were extremely attentive, kind, and very helpful. A special mention goes to Victor, Junior, and Abraham, who took great care of us and made us feel very welcome. To top it all off, the chef personally came to our table to recommend dishes, which was a wonderful and thoughtful touch. I highly recommend this place and will definitely be coming back
