World's best pastry chef, neighborhood bakery prices

Maxime Frédéric was named the world's best pastry chef in 2025, and his day job is the pastry counter at Cheval Blanc Paris. Pleincœur is the other side of that, an everyday bakery selling bread and chocolate at real neighborhood prices.

The name plays on 'plein cœur,' in the heart. It's a nod to the Batignolles address and to a more personal register than his hotel work. It sits in a residential corner of the 17th, not another luxury address.

Pleincoeur is a very cute pastry shop with a pleasant terrace. Their raspberry vanilla ice cream is delicious you can really taste the natural fruit, although it’s overpriced! Their lattes are excellent, especially the hazelnut latte. The viennoiseries were not my favorite, but the lemon tart was good; I would have liked it to be a little more acidic.

Pleincœur left an outstanding impression on me. The level of craftsmanship is evident in every pastry and dessert, each one executed with impeccable technique, perfect balance, and meticulous attention to detail. The quality of the ingredients is exceptional, the textures are flawless, and the presentation is both refined and understated. What I particularly appreciate is how even the most classic French pastries are reimagined with a modern touch while remaining true to their origins. The atmosphere is calm and inviting, and the staff are warm, attentive, and highly professional. Without a doubt, this is one of those rare places you’ll want to return to again and again. For me, Pleincœur has become an essential stop on Paris’s culinary map, and I look forward to coming back often.

Nothing exceptional. The pastry is really well done, good flavour and delicate, but you cannot call a kouign-amann like that if you're serving a chausson aux pommes. Talking about it the filling was excessively sweet and for the riz au lait it was fade. Prices are a bit high but overall it's a good pastry shop. I think they have things to solve still but they'll get there

Pretty decent bakery items, but not the best we’ve had in Paris. Ice cream is popular but we had the strawberry tart. Can be hard to get a table, but still worth a visit if you’re in the area.

I visited Pleincoeur several times, but just recently I ran to try their new ice creams. The atmosphere and service were absolutely great; the staff was very welcoming and proud of the products they serve. And they're absolutely right to be. There is that slight worry when chefs are trending that the quality will fall behind to meet the demands - not here. I have tasted chef Maxime Frederic's work at le Cheval Blanc, Café Louis Vuitton, and Pleincoeur; everyone of my visits is full of hope and expectations... So, let's dive deep into ice cream. The chef is proposing 4 creations: • Hazelnut • Chocolate • Pistachio • Vanilla/Raspberry They also have a wider array of single flavors, but that is not today's focus. Those creations are a mix of the flavor ice cream, biscuits, crumbs, paste/coulis, topped with vanilla gelato (italian style, soft and creamy). Did I try all of them? No. The servings are beautiful and of good size (good European size). So I only tried 3. • Hazelnut: creamy, quite sweet (I do not consume sugar daily, so if you do, your tongue might find it perfect), the hazelnuts are of great quality - if you have tasted hazelnut pastries from the chef, you will recognise the identity and provenance of those, that is his speciality, after all. The biscuit is crunchy AND soft, perfectly holding its ground. This ice cream will take you back to childhood- if you ever left it. • Chocolate: the opposite of the hazelnut one. This is for the chocolate fans who like tasting the lasting flavor of great chocolate on their tongue. It's not very sweet, slightly bitter but not too strong. I call it adult chocolate, for the connoisseurs. The chocolate biscuit supports well the overall chocolate notes ; the topped vanilla gelato rounds the slight bitterness, it is all very lovely. • Pistachio: my favorite one. The pistachio ice cream - with the right pistachio color, slightly beige - was maybe one of the best I've ever tasted. Perfectly balanced, delicate, with the pistachio paste inside the vanilla gelato (all pastes and coulis are poured inside the vanilla gelato) that combines perfectly with everything. The biscuit was soft and dreamy, it felt light and comforting at the same time. An ice cream statement of pastries skills. More than an ice cream creation, every one of them are true desserts, with finesse, thoughts, and quality through it all. I have tasted many ice creams - I believe all of Paris', challenge me - and these ones I add now fondly to my collection. Have a nice Summer at Pleincoeur!
