A single Basque cheesecake, endlessly reinvented Japanese-style

There's one dessert on the menu here, and it's not what a Basque cheesecake usually looks like. Hoso Basque reworks it through a Japanese lens, with an ultra-melting center and flavors that rotate week to week. Nothing like the plain, scorched-top classic.

Order it alongside a hojicha or Earl Grey latte, and find a table near Saint-Paul metro in the Marais. There's no food menu, just the cheesecake and whatever's brewing that day.
