Éthanol

★ 4.6 · 45 reviews Paris Opened 15 February 2026

A walk-in wine bar from a chef who usually takes reservations

Maxime Bouttier built his reputation on Géosmine's tasting menus and locked-in bookings. Éthanol flips that entirely: a Spanish-style wine bar on the corner of rue Jean-Pierre Timbaud and rue de la Folie-Méricourt, built for walking in.

Drinks and cold cuts run early, then a full restaurant service takes over later, backed by a list running past 400 wines from small producers. It's the looser, more spontaneous side of a chef known for fine dining.

Amazing little restaurant! The dishes were creative, tasty and delivered to perfection. Each of them was a take on French or Mediterranean food with a twist and an excellent execution. It works best as small plates to share. The atmosphere was intimate and the decor is stunning. Friendly staff too. I would highly recommend and I will go back!

Everything on the menu looked tempting, and the dishes and desserts were perfect. The service was warm and welcoming. A place to discover or rediscover without hesitation.

A great new place, with great food, great wine, great staff and a great (and nice :) ) chef. Will happily come again (and again). Is it a bit pricier than your average wine bar? yes. But is it worth it? also yes, totally! (after all, it's a sister to the Michelin-starred Geosmine next door, which you can tell by the quality of the food.)

Exceptionelle. Every plate shows culinary finesse and innovative flavour pairings only an experienced Chef could pull off. The tuna, cherry and thai mint combo was fabulous, croquette and anchoivies. Not to mention the outstanding bread. That deserves a Michelin star alone. Maybe a little flavoured butter or oil would be fab. Wines are fun and flavourful- i would suggest one light dry white would make the list a standout. The sweetbreads a standout. The jus balanced perfectly. Must come back to try the tomato watermelon lardo combo. Staff are knowledgeable and great too.
