A chef cooks his great grandmother's handwritten recipes
Andrius Kubilius built Deep Roots around recipes his great grandmother Elena Starkienė left behind, reworked into contemporary Lithuanian tasting courses. It's his most personal project since Nineteen18, with Ignas Štuka in the kitchen and Zoja Zakijeva running the room.
Michelin Guide Lithuania gave it a star within months, one of only five in the country. The room is small, so book well ahead.

It is truly remarkable that one of Vilnius' newest additions to the fine dining scene earned a prestigious Michelin Star less than two months after opening—a testament to the exceptional talent of this Michelin-starred chef and his team. Nothing in life is perfect, though we all strive for it. That's why I'm so grateful to have this restaurant in our beloved Vilnius. Through both its cuisine and hospitality, Andrius and his team create memories that last—perhaps the highest compliment I can give. Words can hardly do justice to what they have achieved here. This is modern Lithuanian cuisine at its finest: thoughtful, refined, and deeply memorable. Bravo ir ačiū už įrodymą, kad maistas – meno ir emocijos mišinys, apribotas tik kūrėjo emocija.
