Slow-fermentation bread in Belair

Netherlands opened on Avenue Allal El Fassi in Belair in July 2025, a bakery-café built around slow-fermentation bread, a method most bakeries in Meknes skip for the sake of speed. Canelés, croissants and other viennoiserie sit alongside the bread program, and chef Adil Kerroum's opening video focused on the traditional method rather than the usual grand-opening footage.

It runs as a straightforward neighborhood bakery-café: coffee and pastry to sit with or take away, on a mostly residential stretch of Belair a few blocks from Avenue des Forces Armées Royales.
