The Coulisse chef's own place in the Hamerkwartier

Coulisse had a Michelin star and two owners. When it closed, chef Tim van der Molen crossed the IJ and opened Nikotin on the Gedempt Hamerkanaal. His former partner Simon Witmaar went the other way and opened Vita Lente in West.

The Hamerkwartier is where Noord's more serious kitchens have gathered, with Camarat and the Chateau Amsterdam winery a few doors along. Nikotin is the one to book when you want a chef with a star on his CV and a room without the ceremony.

    Amazing food, great vibe, and wonderful staff. The server was attentive and made us feel very comfortable throughout the meal. The Szechuan wings were our favorite, but the pork belly, LA galbi, oysters, and milk bread were all delicious. I especially enjoyed the creative mix of Korean, Japanese, and Szechuan flavors. A really unique and enjoyable dining experience. 10/10, and we’d definitely visit again!

    Nikotin is a fun addition to Amsterdam Noord and definitely worth visiting if you’re looking for a lively evening with good food and excellent wine. The location has a great atmosphere, and the outdoor terrace is a fantastic place to spend a warm evening. You can really feel that this part of Amsterdam is continuing to evolve into an exciting food destination. The food was good, although it didn’t quite reach the level I had hoped for. Having travelled extensively throughout Asia, I have fairly high expectations when it comes to kimchi. The kimchi here leaned heavily on heat but lacked the depth, balance, and fermented complexity that makes great kimchi so enjoyable. That said, the fennel kimchi was a creative twist and something I hadn’t come across before. It was tasty and original, although I would still have preferred the spice to play more of a supporting role rather than dominate the flavour. The fish was well cooked, but it arrived with more bones than expected. Either serving it fully deboned or providing utensils to help separate the bones would have made for a much more enjoyable dining experience. As it was, it became a bit messy and distracted from an otherwise good dish. Overall, I had a good time at Nikotin. While there are a few details in the food that could be refined, the atmosphere, wine selection, and location make it a restaurant I’d happily return to.

    I have seen this place in my Instagram feed lately, and, after trying it yesterday, it did NOT dissapoint. The place was certainly in a very unexpected location, miles away from the main city of Amsterdam and in sort of an Industrial and kind of sketchy part of the city. Despite my initial reservations for the surroundings of the restaurant (which looks like an abandoned part of town if I am being honest) the food more than makes up for it. - Kimchi fried chicken sandwich: This sandwich is sublime. It looks really good, and the flavours it carried absolutely complements the presentation. The chicken was crispy, extremely juicy, slightly spicy with an acidic tone from the kimchi which cuts down the richness from the sando and it also finishes with that slight numbing from the szcheuan peppercorns which i like. I wish that the buns they used are wider and slightly firmer so that it's easier to eat them with the rest of the condiments, as, I find myself struggling to eat all of the condiments in one bite. - Sheep's yogurt Ice Cream sando with Rhubarb confit and Hojicha toffee: This may seem like a very simple dessert, but, they absolutely delivered it. The bun was milky, crusty and buttery which compliments the ice cream and toffee together which the ice cream itself has a hint of the "sheep" flavour that also compliments the toffee which has a slight tea like taste. But the thing I love most is the rhubarb which gives a sharp and acidic tone that cuts down the richness and cleanses the palate. I love it when desserts do that. I just wished they put the ice-cream and maybe the toffee inside the sandwich and not only in the top though, so, you get the three condiments in every bite. Overall, this has been a fantastic experience and I WILL be back when I am in town! The waiter which I assume is also the owners wife is also friendly.

    Nikotin was a treat. Everyone was very friendly and the owner greeted us as we came in. We had had a nice reserved table by the window. The food was truly fantastic. I could eat 3/4 Milk Breads easily and the wings were spiced really well. Both the Kimchi Fried Chicken and the Pumpkin dish were delicious. Well priced for a very cool vibe, nice staff, and really tasty food.
