Sidney Schutte cooks Zeeland fish in an old gym hall

Two stars at Spectrum weren't enough to keep Sidney Schutte on set menus. He left to cook Zeeland fish and shellfish a la carte, in a room that used to be a gym.

The hall sits beside The College Hotel, sharing its terrace, and Schutte now runs the hotel's whole food side too.
