Testeo
Lima Opened 2025
A daily menu built on whatever the sea sent in
Carlos Testino calls Testeo a laboratory, not a restaurant, and the menu proves it. There's no fixed cuisine here, just a card that follows the day's catch, mostly seafood, plated with the discipline he picked up cooking in California.
He trained at the Florida Culinary Institute at 19 before building restaurant concepts for a large group, then struck out under his own name on Santa Rosa. That street is now the busiest restaurant strip in Surquillo, and Testeo is a big reason people started walking down it.
