Rotisserie chicken and wine, in that order

The chicken here gets a koji marinade, the same fermented rice culture used for miso, before it hits the rotisserie. Chimichurri on the side, and a wine list built to match.

Koji does to chicken roughly what dry-ageing does to beef. Order a whole bird for two and let them pick the glass. Pioneer Street is a Mandaluyong artery, not somewhere you stroll, so this is a destination, not a wander-in.
