All-day bakery and kitchen on Dockan's waterfront, from Vyn's former restaurant manager

Varv opened on Stora Varvsgatan in Dockan on May 19, 2025, facing Södra Varvsbassängen in a Wihlborgs building shared with Media Evolution. It's the first solo project from Benjamin van Stellingwerff, who ran the floor at Daniel Berlin's two-Michelin-star Vyn on Österlen and spent years on the team at Ruths.

The kitchen bakes its own bread and pastries and serves modern European home cooking with Italian and French touches, covering breakfast, lunch and catering as the Dockan, Västra Hamnen and Varvsstaden waterfront keeps growing around it.

Well seasoned food from fresh ingredients - BUT a full vegetarian meal should contain decent protein. Incorporating oumph, quorn, soy, tempeh, tofu, seitan, pea protein, or well-made been patties in the menu would be great. Music was too loud for the not so great acoustics, so it was difficult to have conversations.

This lovely space is open breakfast to dinner. During lunch, they offer daily specials plus baked goods. For 145 sek (around 15 USD at the time of writing), One gets the main of choice, a nice salad as a starter, as well as freshly baked bread with butter. The food was really really good, so I al excited to visit again for breakfast or another meal to confirm the very positive impression it made!
