Buttermilk biscuits baked through the morning

Roost has run its chicken and biscuits operation a few doors up North Milwaukee for years. In April 2026 the group narrowed the idea down to one thing and opened Roost Biscuit Co., a breakfast-sandwich counter with biscuits baked in batches all morning.

The menu covers the classics, bacon or sausage with egg and cheese, then goes further with fried chicken under raspberry jam and the Hot Mess, which stacks chorizo, egg, pimento cheese and sriracha mayo. It closes at 11am on weekdays and noon at weekends, so it's a genuinely early stop.
