Guillotine Bakery

French flour, French butter, an open bakery floor
Three French expats spent months building anticipation for Guillotine before it opened on 17 June 2026 in the former Rhona Hoffman Gallery on West Chicago Avenue. Founders Vincent Didry and Alizée Bikard run it with head baker Vince Le Bec.
Flour and butter are imported from France, which is the whole argument for the place. The counter carries baguettes, sourdough, croissants, kouign-amann, pain suisse and French cinnamon rolls, plus sandwiches and coffee. The bakers work in full view of the room, so the queue watches the lamination happen.

I honestly can do nothing for any man or woman who leaves Guillotine Bakery and doesn't leave a five star review this place has every base covered and does nothing without the highest degree of excellence! My mind was blown and taste buds were elated!!

Perfect addition to the West Town food scene. All the baked goods we’ve tried are excellent and keep us coming back to try more! Great for grab and go breakfast or lunch or sitting in for a casual morning.

- Honey, I miss Paris - Love, we have Paris at home 🥐 One of the few places that instantly transported me back to Paris. A beautiful Parisian bakery with plenty of space to actually sit, slow down, and enjoy your coffee instead of rushing out the door. Get there before they open - the line forms quickly - but it’s absolutely worth the wait. The pastries, the atmosphere, and that unmistakable feeling of a quiet morning in Paris make it a place you’ll want to come back to again and again. In the gluten-free world don’t forget who you really are!

Compatriotes français, courez-y. American friends, run even faster! What they say is true: the pastries are delicious. But the way you know you're having the perfect French experience is because the baguette (seeded, in my case) tastes exactly like my hometown Sunday family lunch baguette. Add to that a warm and welcoming staff and a wonderful design, and you're sure to become a regular here.
