A 75-year pastrami legend, seven years in the waiting

World famous pastrami, fresh-cut fries and chilli-topped everything are the order. The grand opening was staged with an Elvis impersonator, showgirls and a Vegas Chamber plaque.

The Hat opened on 6 May 2026 on South Rainbow Boulevard, the first Las Vegas location for the 75-year-old Southern California chain famous for its pastrami dip. It had been announced, delayed and re-announced for close to seven years.
