Saint Urban

A wine list that dictates the menu, in the old Veritas room

Saint Urban took over the East 20th Street room that Veritas held for years and flipped the usual order: the wine decides what the kitchen cooks, not the other way around.

The menu turns over with the season. Gnocchi in wild boar ragù in July, pigeon breast with bitter greens in August, a blackcurrant vacherin by October. Sea bass bouillabaisse and a rye sourdough hold the line between courses. The dining room is beige and calm, hung with large abstract vineyard paintings, quiet enough that you can hear individual glasses.

We went as a party of 5 with omakase, and all dishes were exceptional, this season was Spanish cuisine. We also went for wine pairings and the wines offered were exquisite, rare wines and tastes, enjoyed the elegance and the ambience of the place. Definitely will come back for a different season and cuisine. Highly recommend for everyone liking great special foods and wines

Birthday dinner celebration — incredible service and ambiance. The background music was joyful and eclectic, and elevated the whole dining experience. Staff was welcoming, warm, attentive, and professional. We opted for the 7 course dinner and the regular pairing — all of the courses were elegantly crafted: favorites include the squid//fish con arroz, the lamb loin, and the only low light was the braised rabbit being under seasoned. All in all, a memorable dining experience and would come back for their seasonal offerings!

Pricey but we'll with it. The menu builds on itself. I had the 7 course menu with the standard wine pairing for my birthday. The staff were great. The food was delightful and I left full but not too much. The wines were divine. My birthday was in June so Spain was the theme. I'll be back in November with my significant other.

Dinner at Saint Urban was an amazing experience from start to finish. I visited for the May menu with an old friend, and the evening could not have been more memorable. We opted for the 5-course tasting with reserve wine pairings, and every single course impressed in a different way. What stood out most was how intentional each dish in flavor, presentation, and texture. The scallops were genuinely the best I’ve ever had: perfectly cooked, delicate, and unforgettable. The reserve wine pairings were equally exceptional. Even though the selections varied stylistically and weren’t wines I would have thought to choose myself, every pour felt thoughtful and beautifully matched to the course it accompanied. Each glass was also something I would happily order just to savor on its own. Beyond the food and wine, the atmosphere made the evening special. The setting was elegant yet comfortable, and the staff struck the perfect balance of attentive and warm. We never felt rushed between courses, which made it easy to enjoy catching up on each other’s lives over dinner. I also love that the menus rotate monthly. It gives me a good reason to come back and experience something entirely new. Saint Urban absolutely exceeded expectations, and I’ll definitely be returning for future menus.

We had the pleasure of indulging in the April 2026 Loire Valley menu at Saint Urban last week and the experience was exquisite. The ambiance in the restaurant is luxurious and refined without pretentiousness. The dining room is cozy, warm and casual and the staff is inviting, friendly and well-informed. Simply put, the vibes at Saint Urban are immaculate. As for the food and wine - wow! Our night began with an incredible loaf of fresh rye sourdough and the best gougère I've ever had, and then continued on with a perfectly progressive and generously-portioned 7-course tasting menu built around Loire Valley wines and ingredients. It feels wrong to pick favorites from a near-perfect meal, but the white asparagus veal tartare and the halibut with morels are two dishes that I will be dreaming about for years to come. The wine pairings were also brilliant and well-described, with the highlight for me being the funky dry Chenin Blanc that came with the morel course. Saint Urban is a unique and truly special fine dining experience in NYC and I cannot recommend it enough!
