Skip the Tex-Mex combo plate. Celina Montaño's menu at Versos leans on Indigenous Mexican ingredients instead, with former Paloma sous chef Mateo Garcia helping build it out.

The hotel dining room is small and fills fast with guests once lunch hits, so get there early. Order the huevos and the sotol-spiked coffee. Versos closes at 3pm, dinner service is still months away.
