Chef Zakary Pelaccio's Malaysian and Thai cooking hits different in Santa Fe, all bright, funky flavors you won't find elsewhere in New Mexico. The room seats maybe a few dozen, and reservations aren't a thing here, so regulars show up right when the doors open.

Esquire named Leo's one of America's best new restaurants within months of opening. The kitchen closes early most nights, last seating wraps by 9:30, so skip it as a late dinner plan. Go hungry, go early.
