The chef behind Causa and Amazonia opened Maru San near Eastern Market in February 2026, working the nikkei tradition that came out of Japanese immigration to Peru.

Twenty-five seats, everything made to order and handed straight across the counter. You mark a paper menu dim sum-style rather than telling anyone what you want.
