ELLIPSIS

A coffee bar by day, cocktail bar by night
ELLIPSIS runs two concepts in one room near Granville Island, coffee through the day and cocktails once it gets dark. The fit-out gets as much attention as either drink list.
The food is more ambitious than either format implies. Go at the changeover in late afternoon to catch both sides.

Really enjoyed the new Pork Belly dish here, with a perfectly cooked egg and a bed of flavourful rice. The new cocktails are also excellent - especially the matcha mango and the espresso martini. The lychee flavoured martini is great - forgot the name tho.

I can see why so many people like hanging out at Ellipsis Coffee. Located inside Vancouver's Waterfall Building, a contemporary mixed-use building designed by renowned Canadian architect Arthur Erickson, the café makes the most of the space's soaring ceilings and expansive glass walls. Stopped by on a bright sunny day, and the natural light streamed through the windows, making the entire café feel warm, open, and inviting. It's spacious without feeling empty, and there's just a calm, easy-going vibe that makes you want to settle in with a coffee instead of rushing back out. Jairo Arcila – Quindío, Colombia Pink Bourbon | Washed, Peach Co-Fermented with Wine Yeast Tasting Notes: Peach, Mango, Milk Tea The pour-over leaned a little more toward the sour side than I usually prefer, but it still let the tasting notes shine through. The peach and mango were easy to pick out, while the milk tea finish added a gentle sweetness that rounded everything off. It's the kind of coffee that's worth slowing down for, especially if you enjoy bright, fruit-forward profiles. Mango Matcha Linea This dessert was as enjoyable to eat as it was to look at. The outer layer was light and crisp, reminding me of delicate kataifi pastry, giving every bite a satisfying crunch. Inside, one end was filled with silky mango cream while the other held rich matcha cream, so depending on which side you started from, you'd get a completely different flavour. I loved alternating between the fruity sweetness of the mango and the earthy matcha, it kept each bite interesting and nicely balanced. Between the beautiful space, thoughtfully brewed coffee, and well-executed dessert, Ellipsis is the kind of café I'd happily return to. On a sunny Vancouver day, it's hard to ask for a better place to slow down, enjoy a great cup of coffee, and simply soak in the atmosphere. A spot that's every bit about the experience as it is about what's on the table.

I found Ellipsis Café while looking for a beautiful café spot, and it did not disappoint ☕✨ Located inside the iconic Waterfall Building, the space feels super striking right away. Huge glass walls, a sleek pastry counter, and this clean contemporary design that gave me strong “Seoul aesthetic café” vibes 😌 If you’ve been to those modern cafés in Seoul, you’ll get what I mean—it’s all about light, space, and visual calm. The pastries look beautiful, but honestly, the real star is the atmosphere itself. Everything feels minimal, intentional, and very easy to just sit and stay awhile. A lovely little design escape in the city 🌿

Ellipsis is a real gem. We only had a chance to grab a matcha and a decaf cortado to go, but even from that short visit, it was clear this place is something special—and I can’t wait to come back and properly explore their coffee. The staff is genuinely friendly, and the baristas are excellent. What stood out the most was how open and welcoming they were. We ended up having a great conversation with one of them about their pour-over setup, and it felt like a true specialty coffee experience—engaging, knowledgeable, and unpretentious. They’re clearly serious about coffee, but in the best way possible. They had three pour-over options available and a thoughtful setup featuring an April Coffee Roasters brewer, which is always a great sign. You can tell they care about both the quality of the coffee and the experience they’re creating. In contrast to Oide Coffee next door—which felt quite pretentious, limited (only one pour-over option), and underwhelming in execution—Ellipsis strikes the perfect balance. They’re humble, professional, and genuinely open to connecting with fellow coffee enthusiasts. This is exactly what a great specialty coffee spot should feel like: high-quality coffee, thoughtful setup, and people who actually want to share their passion. Looking forward to coming back and diving deeper into their pour-over menu.

It’s a lovely and modern café located and very inviting from the moment you walk in. The space feels bright, clean, and thoughtfully designed, with a comfortable atmosphere that’s perfect for relaxing or catching up with friends. We ordered a pour-over coffee, mushroom toast, and a power bowl, and everything was excellent. The pour-over was smooth and well-balanced, clearly made with care. The mushroom toast was flavorful and satisfying, with a nice combination of textures, while the power bowl was fresh, nourishing, and well put together. Overall, a great spot for quality coffee and wholesome food.
