Ambiente's Czech canteen-and-farm-shop hybrid, opened May 2026

Biskup opened in mid-May 2026 on the corner of Dlouhá and Hradební, an Ambiente venue that puts a restaurant and a farm shop under one roof. You order at a self-service kiosk, the cooks hand the food over from the open kitchen, and there is no waiting staff in the usual sense.

The food is simple Czech cooking in small portions meant for ordering several at a time: rabbit meatloaf, egg with fish salad, single-serving dinners built for people eating alone. The shop next door on Dlouhá 39 sells the same chicken and onions the kitchen is using.

Good to know

Order at the kiosk, then find a seat. Nobody comes to the table.

5* without hesitation. We took chicken menu and beef Tatar and OMG! The liver dumpling soup - better than your grandma does, chicken the most tender thing you ever tasted, even the “simple” carrot salad has everything and more (adding ginger and Sea buckthorn - genius!!). Finished with both dessert options: pear ice cream and egg white ice cream - both pure perfection. All made with local ingredients. You can’t ask for more. Will definitely come again!

Pretty good, but we were at a separate table as opposed to the kitchen/bar tables and the service lagged a bit.

I visited twice and had almost the same mixed experience both times. The food was mostly great: the steak tartare, meat dishes, and broth were excellent. A few dishes had minor issues, such as the pork belly feeling like it needed a side (bread/potatoes). However, the overall experience does not match the prices. Portions are quite small, some starters are tiny, and the seating is uncomfortable for groups larger than two. The biggest problem is the touchscreen ordering/payment system, which creates a bottleneck and feels awkward, especially for a date or business lunch... Overall, the food tastes great, but the pricing, seating, and ordering system make the experience disappointing.

Tried chicken set menue, rabbit set menue. Daily menue and steak tartar. Insane experience. Nothing to complain, simply blown away.

I believe it is good quality food but the prices are far too expensive. It is essentially the chicken and veggies version of Nase Maso next door both part of the Ambiente Restaurant Group. The concept is strong, location is fantastic, but prices are simply too high to be competitive. If a Vilgain store opened next door Biskup would be out competed. I was excited for an actual mini grocery store being opened up in the neighbourhood, but this is not the solution. To give credit like all Ambiente establishments service is of the highest level of professionalism.
