Kimpton's Italian restaurant, three floors in a colonial house
Zola occupies a restored colonial house inside the Kimpton Las Mercedes hotel, three air-conditioned floors plus an open-air terrace. The Italian menu runs hand-made pastas and al dente risottos.
The cocktail list is built around Mediterranean flavors and gets its own mentions in local bar roundups. It's become an anchor of the Zona Colonial's newer dining wave.

Absolutely gorgeous. Loved the food. Very peaceful atmosphere… and when I asked for salt they brought me 4 different kinds in such a cool presentation. Would go back again (specially if someone else is paying, if you know what I mean hehe 😅)

I had a really nice experience while visiting Santo Domingo. If you’re in the mood for Italian food, this is definitely a solid option. The place has a modern and stylish feel, but still keeps a relaxed atmosphere that makes it comfortable whether you’re going for a casual dinner or something a bit more special. The food was very enjoyable and clearly inspired by classic Italian flavors. The pasta Carbonara and the pesto raviolis were well prepared, cooked just right, and full of flavor. You can tell they use quality ingredients, and everything comes out nicely presented. It’s the kind of meal that feels satisfying without being too heavy, and there’s enough variety on the menu to try different things on future visits. Service was friendly and attentive throughout the entire meal. The staff made sure we were comfortable, checked in at the right moments, and kept everything flowing smoothly without making it feel rushed. The ambiance adds a lot to the experience. It’s a great place to sit down, enjoy a good Italian meal, and spend some time in a relaxed setting. If you’re in Santo Domingo and craving Italian food, this is definitely worth a visit.

This is a beautiful restaurant in a colonial era mansion, in the historical Colonial Zone of Santo Domingo. I loved the surroundings where I sat. I ordered the ravioli. They pour a cheese sauce over it at table. The sauce was delicious and so was the filling. But the dough was too thick and tough. That's why only four stars. But the dessert was on another level. It was the panna cotta with fruit. The presentation was beautiful. They served it inside a big strawberry shaped ceramic. The Panna Cotta was the perfect texture, and a generous portion, with lots of fresh berries. Service was attentive and excellent. Totally worth a visit.
