Skip the beachfront crowds and head inland to the Sindicato de Sales, where Pablo Pinchagua and Linda Helen roast their own beans and stamp the roast date on every bag. No guesswork, just fresh coffee.

The pair already run "Ruta Cafetera" tasting events, a bold move for a shop barely open a few months. Worth watching as it grows into something bigger than a single counter.
