Asian-Mediterranean fusion from Les Agitateurs, facing their own Michelin-starred restaurant
Magma opened on rue Bonaparte, near Nice's port, on February 17, 2026. It's the second project from Juliette Busetto and Samuel Victori, the duo behind Les Agitateurs, the Michelin-starred restaurant just across the street. The name nods to a boiling point, Asian technique and flavor meeting Mediterranean ingredients head-on: the kitchen treats it as a genuine crossing of two culinary traditions, not a set of Asian dishes tacked onto a Mediterranean menu.
Running a second, more experimental address across from their own starred restaurant let Busetto and Victori push further into fusion than a Michelin-rated menu usually allows. It gave Nice's port district a second address from the same team, working in a looser register than Les Agitateurs.

What a gem! In the middle of a busy neighborhood, Magma feels like a quiet escape. While understated in many ways, the food was not shy. Amazing flavors, interesting textures, and accommodating to plant based diet.

We were underwhlemed by the food at Magma. The food was good, but so far from being great. Not sure how they ended up on a Michelin recommended list. This was our last meal after a week of amazing food in Nice, and we were disappointed to the point that we couldn't even smile and rode home in our uber in silence. One thing to note, the restaurant only has room for about 16 people, and you have to squeeze between the tables to fit. It's intimate, but also not friendly. The friend chicken is similar to a Thai hat yai style but more saucy, not as crunchy, and was just missing something. It also didn't look good. It was bright red and just not appetizing to the eye. The duck was well cooked but the decomposition made it difficult to get a perfect bite. The pork dumplings in the pho broth was the best tasting, but also pretty poorly executed in that the dumplings were too big and pretty much fall apart between bowl and mouth. A better bite would have been more of them that were smaller that you could eat in one bite with the pho broth. The summery mederranian dish was lackluster and really nothing to write home about. The rice was crispy at the top and soggy (too vinegary and inedible) at the bottom. It is similar to Uchi's konoko nabe but with less flavor and crispy at the top but not all the way through. Ultimately, the restaurant was a miss. The cocktails were fine, but my favorites of the night were probably the peach sour beer, the charred tomato, and the pho dumplings. We had more food, but not worth writing about.

We love it. Again Samuel and the team created a wonderful place with excellent food and wine. Every night is something special. I appreciate being guest and will come back very soon.

Great night. The place is small and intimate and we got the perfect seats in the bar. The staff was very nice and the atmosphere was great. Food was amazing. We did different a la carte and especially the tuna and the carrots was so tasty. Massive recommendation!

My husband and I came across this new restaurant with stellar reviews thinking the reviews were fake but rest assured, they are not. Everything we ordered was delicious and chef Ambrose was lovely! He told us that the menu will change or might change every few months so while it’s available, you should get the duck breast (not shown in my photos).
