Aman's Italian signature, cooked by an ex-Mirazur chef
The lamb comes with caponata, but it's the pedigree behind it that raises eyebrows. Francesco Balloo trained through starred European kitchens, Mauro Colagreco's Mirazur among them, before landing at Amanjena to run ARVA, Aman's Italian format.
His approach is cucina del raccolto, cooking built off the harvest, and much of that harvest comes from the Sanctuary Slimane permaculture garden a few kilometres out. The agnello e caponata pairs Moroccan lamb with Italian technique without fuss. Next door, ARVA Bar pours a wine list weighted toward Italy.

Had an incredible dinner at Arva at Amanjena. The setting was beautiful and the views were amazing, making it such a lovely atmosphere for dinner. The food was delicious, and the chef went above and beyond by preparing a special mini birthday cake for me (complimentary) which was such a thoughtful touch. A truly memorable evening - I would definitely recommend!

Excellent restaurant, very good dinner, and professional service. I highly recommend it for lovers of Italian cuisine. The lobster salad with apricots was a delight, and the lamb chop with grilled eggplant was a real treat, cooked to perfection. Bravo to the chef and his team!
