Open-fire rooftop cooking from Helsinki's YesYesYes chef

Richard McCormick made his name at Helsinki's YesYesYes. Now he's cooking everything over open fire on a rooftop in the medina, and vegetables get just as much attention as the meat.

The roof itself was built from reclaimed material and planted out like a garden, so it feels nothing like the tiled riad terraces around Dar El Bacha. Set menus run 290 and 490 dirhams.
