Issam Rhachi cooking the whole Moroccan map, not the postcard
Chef Issam Rhachi trained under Pierre Gagnaire at the Naoura Barrière before making his name at Le Douar. At TFAYA, out at the Park Hyatt Al Maaden, he skips the tourist menu for regions most Marrakech kitchens ignore, plus dishes pulled from across the wider Arab world.
Order the Dakhla octopus lacquered in chermoula with potato maakouda and saffron aïoli. Oussama Sadik runs pastry, and weekends bring Moroccan and Andalusian music into the room. Dinner only, 7pm to 1am.

Tfaya offers an exquisite Moroccan and international selection for breakfast, with both buffet and made-to-order items. The eggs Benedict with salted tfaya was my favorite, as it’s an interesting twist to a classic. I liked the egg tagine with beef jerky and variety of artisanal salads too. The only thing I was slightly disappointed with was the lack of healthier options, such as low fat or Greek yogurt.

The restaurant is beautiful with all the staff providing excellent service and always happy to help. A special shout out for Saad who is absolutely fantastic. So happy to help with everything. We’re guests in the hotel and Saad remembers your preferences from breakfast the day before which is so wonderful. He is exceptionally courteous and attentive with impressive attention to detail. I’d also like to mention Mohamed Amine who was our server for dinner. Excellent table service and very helpful with our vegetarian choices in the buffet and options. We were very well looked after.

Great breakfast - the buffet as well as the a la cart menu has a very nice selection and everything tastes excellent. Next to the continental style breakfast there is a wise selection of Moroccan food. The service is very good. We particularly enjoyed our conversations with Saad who also gave some insights into Moroccan food culture.
