David Toutain's first kitchen outside Paris

Two-Michelin-star chef David Toutain sends his vegetable-led cooking to Bangkok, with Thai produce doing most of the talking. It's the same instinct that built his Rue Surcouf dining room, replanted on the seventh floor of the Ritz-Carlton on Witthayu.

Dinner runs as a set menu and prices like one. Lunch is the smarter entry if you want a taste of the kitchen without the full commitment.

My first birthday dinner in Bangkok was one to remember, celebrated at Duet by David Toutain at The Ritz-Carlton Bangkok, recently featured in the Michelin Guide Thailand 2026 and Tatler Thailand’s Best 20 Restaurants. • Created by Chef @david_toutain of the two Michelin starred restaurant in Paris and Chef @valentin.fouache , who has led Duet’s kitchen since day one, the menu reflects a seamless balance of classical French foundations and contemporary expression. Technique, precision and exceptional produce take centre stage, allowing each ingredient to shine in its purest form. Honestly speaking, after dining here, I wouldn’t be surprised if they earn a Michelin star soon. Just my opinion, but let’s see. • We had their Signature Menu, the restaurant’s most complete expression of its culinary philosophy. The meal began with a selection of beautifully executed amuse bouche such as smoked caudoc fish cream atop crisp meringue with beetroot, and a playful pairing of cheddar cheese and beer. • Freshly baked bread was served with lemon infused butter, while each course arrived with a provenance card highlighting the origins of key ingredients and the producers behind them. The journey began with Alaskan King Crab paired with Shadi Schrenki caviar and delicate pearls carrying notes of fresh cream, marine salinity, vanilla and kaffir lime. A timeless classic reimagined at Duet by David Toutain, the pâté en croûte comes in a cylindrical form blending land and sea with gentle Kanzuri warmth. Foie gras, pigeon, pork tenderloin and shrimp are layered in golden pastry with pickled turnip and a touch of Kanzuri for brightness and soft heat. • The Normandy Scallop, grilled over embers and paired with cauliflower and X.O. sauce, delivered remarkable depth. The slow infused seafood sauce unfolded with layers of umami before finishing with the distinctive character of Jura yellow wine. A signature dish since the restaurant’s early days, the Brittany Blue Lobster was served with épicéa, introducing a bright citrus like freshness alongside a rich homardine sabayon and fresh brassica. • For the main course, Ultimus Wagyu was beautifully tender with deep marbling that unfolds fully on the palate. Paired with smoked eel in the spirit of an ancholade, it added gentle smoke and umami, creating a subtle terre et mer expression where richness and fat meet in a perfectly rounded, resonant finish. • Dessert offered a satisfying progression of sweet, tangy and chocolate driven flavours. Trou Normand, inspired by the Norman tradition of palate cleansing apple spirits, was reimagined with apple and Normandy cream. The finale featured a celebration of Chiang Mai chocolate presented in multiple forms including mousse, buckwheat ice cream, trombone and a soufflé that easily a favourite. The wine pairing elevated the experience further. A 2023 Domaine Jonathan Didier Pabiot Léon Pouilly Fumé complemented the Alaskan King Crab beautifully, while the 2022 Etienne Sauzet Bourgogne Blanc paired effortlessly with the scallops. For the Wagyu, we were invited to explore two distinct styles through Côte Rôtie and Amon Ra Shiraz, selecting the pairing that best suited our own palate. • A duet of craft and nature where precision meets produce, technique meets emotion, and every course plays its part in harmony. A birthday celebration worth remembering and a dining experience that defines Duet at its very core. #ritzcarltonbangkok #duetbydavidtoutain

This restaurant wasn’t originally part of our plan, it was a spontaneous choice for an early birthday celebration, and it turned out to be a wonderful surprise. The manager took exceptional care of us, making the experience truly memorable. The ingredients were outstanding and lived up to the standards of a two-Michelin-star chef. The desserts, however, were the highlight. Even as someone who doesn’t usually enjoy sweets, I finished every bite—especially the chocolate creations, which were absolutely impressive. If they ever open a dessert shop, I’m sure it would become one of the most popular in Bangkok.

One of the classic French dining experiences in town that I highly recommend! Refined dishes with a charming theme, excellent complemented by wine pairing, and a great atmosphere.

We chose Duet for a very meaningful evening, and it felt special in every possible way. The restaurant itself is beautiful, calm, and intimate, with a setting that immediately makes you slow down and enjoy the moment. I loved how the eight-course menu unfolded. Every dish looked like a piece of art but, more importantly, the flavours were elegant and balanced. Nothing felt overdone. The wine pairing complemented everything so well and made the experience feel complete. What I appreciated most was how comfortable the team made us feel. Everyone was kind, attentive, and genuinely cared about making the night memorable. It was one of those evenings where everything just clicked — the atmosphere, the food, the wines, and the feeling behind it

We celebrated a very special moment at Duet on top of the Ritz-Carlton, and it turned out to be one of those evenings you don’t forget. We chose the eight-course tasting menu with wine pairing and every course felt thoughtful and precise. Beautiful plating, surprising combinations, and flavours that kept building throughout the night. One of those dinners where you slow down without realising it, just to take it all in. The wine pairing fit perfectly and added to the experience instead of overpowering it. Our table was quiet and private, yet the atmosphere still felt warm and alive. The space itself is stunning, especially once it gets dark. Service was genuinely friendly and natural, not formal for the sake of it, which made us feel comfortable from start to finish. Everything just worked. The setting, the food, the wines, and the people. We left feeling like we had experienced something special. Would absolutely come back, especially for another celebration.
