Chef Cory Harwell set the goal explicitly: an average couple should eat here for $150 or less, tip included. He gets there with less familiar cuts and careful cooking rather than smaller portions.

Butcher & Thief opened in December 2025 in Suite H100 at The Bend on West Sunset Road, from the chef behind downtown's Carson Kitchen. The five-cheese mac and cheese has become the dish people order without being asked.
