Seafood takes over the Bellagio room built for Picasso

Red Sicilian prawns, grilled octopus and a two-pound lobster fettuccine anchor the menu. The windows still look straight onto the fountains, the reason the space was worth fighting for.

Carbone Riviera opened in November 2025 in the Bellagio room Picasso held for more than 25 years before closing in 2024. Major Food Group already runs Carbone at Aria; this is the seafood-led sibling. Mario Carbone worked the floor at the opening.
