The city's best off-Strip tasting menu, barely announced

This is the most impressive off-Strip dinner in the city for the money, a tasting menu that runs closer to Spanish home cooking than the tapas format that made the group's name.

A repeat James Beard nominee behind Anima by EDO, Oscar Amador opened it in November 2025 in Suite 11-A on South Jones Boulevard with barely an announcement. He calls it the natural evolution of what EDO started.
