A Chopped champion cuts brisket to order, inside a casino

Brisket, pork belly burnt ends and smoked turkey are sliced to order, the same cuts chef Bruce Kalman built his name on downtown. A Chopped champion, he opened the original in the Arts District in 2021 and ran it solo for years.

This Miracle Mile counter opened inside Planet Hollywood on 24 April 2026, his first expansion. Good barbecue rarely shows up in a casino food court, and that is the whole point.
