Michael Mina finally cooks his own Egyptian heritage

Marinated bigeye tuna with crisp falafel and whipped tahini, chilled lobster salad with blistered peppers, a modern take on the Egyptian fish fry, and black harissa lamb chops carry the menu. The bread, spread and pickle service that opens the meal is what people talk about afterward.

Orla opened at Mandalay Bay in January 2024. Mina has run restaurants in Las Vegas for decades, but this is the one built around Egyptian flavours filtered through the wider Mediterranean.
