Chef Brad Wise cooks the steaks by pulling them off the fire and back, reverse grilling over American red oak in the Santa Maria style borrowed from California's Central Coast.

Rare Society opened on 2 July 2025 in Suite 100 on Helen Toland Street in UnCommons, the first Nevada location for the San Diego group. The room is smaller and clubbier than a Strip chophouse, with a Rat Pack swagger it earns rather than announces.
