It's Potato opened on Sherman Way in July 2026 with a single idea pushed further than strictly necessary. The concept is build-your-own baked potatoes; the dining room is dressed as the inside of a 747.

That means overhead bins, fake plane windows, and a cockpit. Whether the theme improves the potato is a matter of taste, but it's the only restaurant in the Valley where you eat lunch in an aisle seat.
