Chicago tavern-style squares in Buckman

Thin, cracker-crisp and cut into squares instead of wedges. That's the Chicago tavern-style pizza Proof Pizza built a following on as a food cart before landing a brick and mortar on SE Morrison Street.

It still runs on late-night takeout window energy even with full service now. Grab a square or two passing through Buckman rather than building a sit-down dinner around it.

Ordered a pizza for pick up. When I got there, as it said it was ready, they accidentally handed out the wrong order so I had a to wait just a little bit for them to remake it. Totally worth the wait, and they said they would see about getting me a discount for the trouble, which is didn’t even bother me, but it did have a huge impact on how I view their customer service. Good job proof, and thanks for a tasty dinner!

I’m from South Side Chicago and I’m a chef, which means I am legally, spiritually, and emotionally required to be annoying about tavern style pizza. I know pizza really well. I grew up going to Pizza del Campo in Chicago as a kid, and I honestly thought I would never taste anything again that reminded me of it that much. Then I had Proof Pizza. Rude, honestly. How dare you make me emotional over a square cut pizza? I was here for Jerry’s Pizza. Then Jerry stopped making pizza. I was here for Bridge City Pizza. Then they stopped making pizza. At that point, I figured I was going to have to put on my chef coat, go full dramatic South Side Chicago exile, and create my own tavern style pizza just to survive in Portland. But nope. Proof Pizza showed up and did the work so I don’t have to. The cracker thin crust, the sauce, the cheese, the whole thing hit that Chicago memory button in my brain. As a South Side Chicagoan, as a chef, and as someone who has been personally victimized by the disappearance of good tavern style pizza in this city, I cannot thank you enough. Proof Pizza, thank you so, so much. You saved me from having to become even more annoying about pizza than I already am.

First time trying out classic thin crust Midwest style pizza and I loved it! The cheese they use was delicious, hand rolled motz sticks were 10/10 and the salad tasted perfectly fresh. The atmosphere they created with exposed brick and trailing plants lining the walls is beautiful and cozy. Excited to go back, this place has easily become my new go-to in the area!

Finally found legit Chicago tavern-style thin crust pizza in Portland. Perfectly crispy crust, Ingredients under the cheese is true to style and cut the way it should be. Proof Pizza absolutely nails that classic neighborhood pizza vibe. Easily one of my favorite pizza spots in the city.
