A corner bakery at Hayes and Central, opened spring 2026
Sol Bakery opened at the corner of Hayes and Central in spring 2026, in the residential blocks west of Divisadero where NoPa turns almost entirely into flats. There is no passing trade to speak of, so the bakery works on people who live within a few streets.
That is a normal way to run a bakery in most cities and an unusual one here, where the money is on a commercial strip. It sells out on weekends earlier than a shop this size should.

I showed up at 10 am on a Sunday and the line was not too crazy. Maybe 5 mins wait time. There was still many items left. I was pleasantly surprised. I bought the pluot almond tart, guava tart and the sesame kouign amann. Everything I tried was so yummy and most importantly not too SWEET. The stand out for me was the Guava. Definitely worth the hype. The space is not too big, so get your pastry and go. Not really a place to sit and hang out.

More like sold out bakery 😮💨 Came at 930 on a Friday and there was a medium line. By the time we got to the counter, many things were already sold out. I know this is part of modern bakery culture but it’s still disappointing. Fortunately the guava tart was still in stock. It was quite tasty. Great balance of sweetness and tartness. We also got a lemon cookie and regular croissant (all of the fancy croissants were sold out). Both tasted like something you could get at a grocery store. Overall I would not recommend wasting your time in the line here.

I came to try their pastries on Friday noon (was hoping to get some of their signature items but was not ready for an hour wait). By that time there were no tarts (the viral guava one and passion fruit) but the crème puff and twice baked huckleberry croissant were very good too giving the overall picture for their baking style and flavors. The custard in the puff was so tender and balanced. The crunch of croissant and the brightness of huckleberry jam was actually remarkable. I’ll definitely come back to try more if I’m around. Hope they’ll increase days of operation.

Delicious pastries! I really enjoyed the savory croissant, Croissant Danish with Custard & Strawberry Passion, and the guava tart which they are famous for. Their coux with lemon curd has a very light touch of lemon which I was sad about! Was hoping it had more lemon zest to it. -Focaccia is available at 11:30 am. -Guava tart limit one per person. -Be prepared to wait! - they automatically charge for a compostable box to hold your tart -There is only one table in the bakery and limited seating outside.
