Ramenya Shima

Twelve-hour broth on Sugar Street, named for the chef who makes it
Twelve hours in the pot gets you a tonkotsu-shoyu hybrid broth that splits the difference between rich and light, and it's the reason to squeeze onto one of the dozen counter seats here. Noodles are made in-house and cooked to order, not held in a steamer waiting for you.
Sugar Street has quietly turned into a ramen strip over the past few years, running from Causeway Bay's Times Square down into the residential blocks. Shima sits between the heavier tonkotsu bowls and lighter shoyu ones that dominate its neighbors.

To avoid waiting, we headed to the restaurant just before 5 p.m. The restaurant was serene and quiet, with half of the seats filled. Got seated on the ramen bars and needed to bring the bowl of noodles down to the table by ourselves, (naturally with both hands) it does feel that I’m receiving the noodles in a honorable way. Nothing bad about the service but also not feeling being served in any ways. Enjoyed the noodles.

Very tasty soup with a variety of meats on top. Both soy sauce and salt flavors are great.

Never tried in Tokyo, but I think it’s pretty nice! I like the texture of the ramen, the taste of the Japanese char siu and slow cook chicken breast were on point. As I had made a reservation, I got to be seated upon arrival.
