A Mediterranean sharing menu, dressed with contemporary art
The Jamón Ibérico starter and a grilled ribeye come up repeatedly in reviews. The menu tilts Spanish and Italian, built for sharing across the table rather than individual plates.
The room is dressed with contemporary art, not the rustic-chalet look the name might suggest. It's kept its momentum well past opening week, still pulling reservations two years later.

Really good experience all around, some of the best food I've had so far in the Dominican Republic, the only criticism I have is that the sign outside cannot be seen, so even after we finally arrived, we weren't sure! But the experience once inside was perfect!

Food and drinks were great! But one waiter was extremely rude

Very elegant and sofisticated restaurant, outstanding service and food. We had a Jamon Iberico as entry and shared a grilled ribeye which was very juicy, both delicious. But the dessert was the umost of the dinner. I think it was a sweet and salty coconut flan. It was amazing. Strongly recommended

Well now, in my humble opinion, folks, Simón Bolívar’s name gets tossed around plenty, but I gotta say, I don’t quite see The Liberator’s true spirit shining through here. Now, the Avenue it sits on does bear his name, and I reckon that’s enough to justify borrowing his last name for the place. As for the alpine Chalet vibe? I’m not so sure it’s there — but hey, I could be wrong. If you’re aiming to go continental — and not just French continental — with your manners and etiquette, well, that’s just how it is, no questions asked. The real deal here is that “The Chef knows best,” and that seems to be the spirit, the Geist, driving this whole operation. I’ll give the Chef a solid 4 out of 5 for crafting a gourmet, fine dining experience where you’re a willing participant, sitting back and following instructions, because, well, the Chef knows best. That’s just the way it goes.
