Pop-up ramen that finally got its own room on the Ruysdaelkade

Smaak Ramen spent years popping up in other people's kitchens before landing a door of its own on the Ruysdaelkade, the quieter canal edge of De Pijp.

The chefs are Japanese, with CVs running through Utage Sake Bar, Café Bloemenmarkt, Bar Theo and KU Kitchen Bar. That pedigree shows in the broth. Open Thursday to Monday, it covers a Sunday-night ramen craving as easily as a weekday one.

What a special experience. I was lucky enough to try their special Taishoken-style tsukemen, and it completely exceeded my expectations. The broth had incredible depth with the perfect balance of sweetness, acidity and umami, while the noodles had outstanding texture and chew. Every component was beautifully executed and felt carefully crafted. It’s rare to find this level of authenticity and attention to detail outside Japan. Excellent service, great atmosphere, and a meal I’ll remember for a long time. Highly recommended!

I really loved the clean flavor of this clam broth! Other soup bases are usually too heavy for me unfortunelately. And the Karaage fried chicken is sooo good!! Glad I ordered that one! Just so you know, its only for walk-in because the space is not that big.

The place itself is fantastic—great design and excellent service. Combined with their phenomenal Shoyu Ramen (honestly, one of the best I’ve ever had), it’s a solid 10/10. Highly recommended

This is probably the best vegan ramen I’ve had in the city. The crispy tofu on top is absolutely delicious and adds the perfect texture. I’ll definitely be coming back more often. The chef was also incredibly kind and accommodating. Even though we arrived late, he still warmly welcomed us and prepared this amazing ramen for us. Thank you for such a wonderful experience.

The one & only authentic japanese ramen here in Amsterdam!! Im surprised! I lived 4 years in Japan and their food brought me back to Japan, the taste even better than many ramen shops in Japan. Top quality!!!
