Peruvian classics rebuilt from scratch in Surco

Duck ceviche. A causa loaded with prawns. An anti-kuchu that riffs on the standard anticucho. Chef Christian Moreno Romero built Albor's menu around one question: what if the dishes every Peruvian grew up on got a rethink instead of a repeat.

The cocktail list draws on the same local ingredients as the kitchen, so skip the default pisco sour and order off it instead. The menu is short on purpose.
