Chef Black's fermentation-driven, zero-waste tasting counter
There's no printed menu at Blackitch. Chef Phanuphon "Black" Bulsuwan cooks whatever's best that day, built around fish used down to the last usable part and vegetables he's fermented himself. Expect something you haven't eaten before.
The counter seats a handful, and Black talks you through each dish as it lands. It's become one of Chiang Mai's most serious dining rooms, and the Michelin guide agrees.

We had an absolute amazing time in this restaurant. Fancy, but not out of reach. I don’t like fish and seafood and they really adapted everything so I would enjoy my culinary experience just as much as everyone. Tae was a wonderful Maître D and his staff was polite and very professional. We felt very well taken care of and our food journey was exceptional. 1000% recommend.

We had dinner at Blackitch Artisan Kitchen in Chiang Mai, and it was one of the most memorable dining experiences of our trip. Every course reflected incredible creativity while staying deeply connected to local ingredients and Thai culinary traditions. The flavors were thoughtful, beautifully balanced, and full of pleasant surprises. It felt less like a typical dinner and more like a carefully crafted journey, with each dish telling its own story. The intimate atmosphere made the experience even more special, and the team’s passion and attention to detail were evident from start to finish. Their warm hospitality and thoughtful explanations added another layer of appreciation to every course. If you’re looking for a unique dining experience in Chiang Mai that celebrates local ingredients with artistry and heart, Blackitch Artisan Kitchen is absolutely worth visiting.

I came back to Blackitch after many years, and it has grown since my last visit. Back then it was a much smaller restaurant, but now they’ve expanded into the neighboring building, making the space much more comfortable while still keeping the same warm atmosphere. The tasting menu was very enjoyable. The chef focuses on local ingredients and turns them into creative dishes that are both beautiful and delicious. Almost every course impressed me, with great flavors and thoughtful presentation. Service was another highlight. The staff explained each dish clearly, were attentive throughout the meal, and made the whole dining experience feel relaxed and welcoming. Blackitch is definitely one of the restaurants I’ll return to whenever I’m back in Chiang Mai.

A lovely spot for a date night. Interesting cocktails! They can accommodate vegetarians too. Attentive staff! Local flavours but fine-dining style. Recommend for a special occasion.
