One menu traces Jamaica, Trinidad and the American South
The name refers to the Maroons, communities of escaped enslaved people in the Caribbean. The cooking follows that thread through Jamaica, Trinidad and the American South. A grand opening party in May turned into one of the louder restaurant nights of the year.
Maroon opened at the Sahara in April 2026, chef Kwame Onwuachi's first Las Vegas restaurant and his follow-up to Tatiana in New York. The Sahara had spent the previous summer losing Bazaar Meat.
