COTE 550

Simon Kim's Korean steakhouse, scaled up on Madison
This is the Flatiron original's bigger, bolder sibling, not a copy of it. Same Korean barbecue backbone, but the menu reaches further here.
The Blackjack Sandwich is the reason to order: A5 wagyu and Périgord black truffle stacked with truffle aioli between milk toast. The building does double duty too, sharing space with Bar Chimera, and a Sushi Yoshitake is coming to the same complex.

For my first time in cote, it was a pleasure to see how this hospitality has created an unique experience to cater New Yorkers and anyone from overseas. This location has been opened since late spring, when I have always hear of Cote, I did not realize how affordable can be. With the butcher fest and amazing selections of cuts, your servers will navigate through the flavors of authentic bbq. Josh was our server, he was so thoughtful through the night to keep checking on us and had the capacity to help me through my dietary restrictions of going above and beyond to make our time special. So please do not hesitate to make a reservation and come to enjoy, you can also order a la carte and be able to experience the service. Mr. Hector, he was at the end one of the warmest faces in there, coming from the South of the country to believe in a mission. Food 10/10, drinks 10/10 and ambiance it's 10/10. I will be back to try more and enjoy, remember I believe if you have to choose between all the bbq, definitely make some time to visit and enjoy their food. I will see you guys again soon. Prices are fair and worth every second of it. Dry aged ribye and Galbi cote were part of my favorite with A5.

I really wanted to love this, and all the pieces are there for people to fall in love. But unfortunately the food just didn't hit the mark for me. Interior design, fit out, experience, "arriving". All exceptional. Service was excellent though a little sloppy - near midnight, I can forgive this. Water was always full, but service lacked a bit of warmth, felt more like a procedure. Also requested salt for the steak, wasn't given to me, and I requested a drinks list before starting on the grilled meats, which didn’t arrive until the last course. But all this could be forgiven, if the food was truly exceptional. Which unfortunately, it wasn't. First bites - Toro & Beef Consomme Toro was decidedly the least toro-like piece of tuna I have had, lacking the delicate marbling and texture I normally associate with the cut. Consomme was an extreme disappointment. More like a insipid, impotent, watery beef bone broth than a powerful, ultra reduced one shot palate dominator. Pork belly Perhaps its personal taste, but while I did find the dish tasty, I fundamentally disagree with its execution. Great smoke flavour, great sear, strong but gentle pork flavour. But the mustard mayo and the pickles were like a bizarre guest so the dish could cosplay as American. The pork was so thick it needed a knife and fork, but there are no knives and forks provided, forcing the customer to awkwardly maneuver the pork belly around the plate and their mouth. I think halving the thickness, and bringing in the doenjang base sauce, along with pickled onions would give the dish the balance and more authentic flavor it deserves. Butchers Feast Started with banchan, which in Korean BBQ really sets the tone for the quality of the meal. In this, the scallions salad and sliced radish kimchi were excellent, unfortunately, that is where it stopped. The cubed daikon kimchi and the cabbage kimchi, two of the most popular and core banchan dishes, were both severely lacking in balance and flavor. Cabbage kimchi was lacking in flavour, yet over salted and was a soft, gritty mess. The savoury side dishes, the souffle and the stews, were largely unimpressive. Souffle was reasonably well executed but one dimensional in flavour, like an afterthought. The stews were similarly lacking the depth and clear, powerful flavours they are known for. Both stews were over salted, but the quality of the base broths and the poor quality kimchi really shone through here, making for a wholly unpleasant experience. The meat quality was excellent, and I do appreciate that the experience is catered for those who have never had KBBQ before. It is extremely approachable in this sense, as the servers grill all meats for you. In this, our server was well trained, with all meats served with a beautiful sear. However, I do disagree with the practice of cutting the meat in half after cooking it. I am sure this is for ease of customer experience and operational ease of execution, but the outcome of this practice is that all the beautiful juices inside the steak leak out all over plate, instead of bursting inside the customers mouth. This, to me, is an unacceptable as so much flavour and unctiousness is lost in that process, after spending so much time and labour on sourcing quality purveyors and dry aging the meats. This could be fixed by slicing the pieces for the grill slightly smaller. In addition, I generally found the meat to lack proper seasoning because the cuts were too thick, the seasoning on the outside was insufficient to carry through to the centre. The galbi, which is the crown jewel for any serious BBQ establishment, was passable. The sugars from the marinade were nice and caramelised, the meat was juicy and sweet, but it simply failed to leave any sort of impression. The flavour was surface level; once you bit through to the centre, it was bland. This indicates perhaps they did not marinade for the gold standard 72 hours. Beautiful on the outside, vapid underneath. Cote550 was disappointing but perhaps my focus should've been on the experience, not the food.

We had the Butcher’s Feast and it was nothing short of phenomenal. The quality and variety of the meats were incredible perfectly cooked, incredibly flavorful, and beautifully presented. Every bite was a highlight, and the sides and accompaniments complemented the feast perfectly. It’s a true carnivore’s dream and easily one of the best steakhouse experiences we’ve had. A huge shoutout to our incredible server, Arabella, who made the evening even better. She was attentive, knowledgeable, warm, and went above and beyond to make sure everything was perfect. Her recommendations and genuine care really elevated the whole night.

Great dining experience and one I’d highly recommend for client dinners, celebrations, or any important entertaining. The service is truly spectacular, attentive without ever feeling intrusive, and the staff makes you feel well taken care of from start to finish. Everyone who works there is super nice. The food was delicious, with every course thoughtfully prepared and beautifully presented. The space itself is elegant, comfortable, and surprisingly quiet, making it easy to have a conversation without shouting across the table. It’s definitely on the expensive side, but it’s well worth it if calling for something special.
