Get there early. Pipsqueak Bagels tends to sell out by midday, and once the everything bagels are gone, they're gone. These are boiled and baked in the New York style, dense and chewy rather than the soft, fluffy versions you find around the Pacific Northwest.

Founder Madilyn Gibbons built a following selling bagels around Portland before opening this storefront. Start with a classic everything bagel and cream cheese, it's the simplest way to judge a bagel shop.
