A former chemist who tested the New York water theory

Marigold Bagels sits at 2850 El Cajon Boulevard in North Park. Owner Mike Rabinowitz spent thirty-odd years as a pharmaceutical chemist before this, and when people kept telling him New York bagels were about the water, he brought water back from New York and ran the test.

His conclusion: one percent water, ninety-nine percent technique and ingredients. The bagels back him up. Dense, chewy, closer to the New York end than the California sourdough end of the local spectrum.

What a great spot! I got the bacon, egg, and cheese bagel — a classic. The big test for me is whether or not the bagel holds up to hot, melty ingredients and I can get a bite without the fillings falling out. This sandwich passes the test with ease. I love the gooey American cheese so much. Visiting during non-peak hours during a weekday made for an easy wait and plenty of seating. I enjoyed the patio! The owner came out for a quick chat. It was a friendly, welcoming, and delicious dining experience.

$16 for this. On the pricier side for sure. However, plenty of salmon. Toppings are great! Everything is fresh!! Great nova lox!!! Only thing I’d complain about is the bagel itself being just a tad bit too chewy. Other than that, there’s absolutely no way this place should be 4.3 stars. That is insane. Don’t trust the reviews !!

Yummy East Coast inspired bagels with artisan level flare. Everything was deliciously executed even the classic staples. There's usually a line but it moves quickly. Seating is limited so not great for large groups. Flavors really took me back home to NY. Loved the Whitefish on a Zatar bagel (Greenpoint) and the Salmon on an everything bagel with chive and onion shmear (Crown Heights)!

Marigold Bagels is the real deal! If you’re craving an authentic New York-style bagel in San Diego, this is the spot. The bagels are incredibly fresh, packed with flavor, and clearly made with care and attention to detail. What makes this place even better is the outstanding service. A huge shoutout to Mike and Brittany for being so welcoming, friendly, and genuinely awesome. Brittany made my experience 10 times better today with her kindness and positive energy! Highly recommend!

These bagels are insane!!! So fresh, so good, and the dill and lox cream cheese is next level. And the best part is that the staff are super nice, even when it's busy. Which is often!! Seriously, get there early because a line forms quickly. Such a great vibe, thank you for the best breakfast I've had in a minute ♥️
