Burgers named after the browning reaction, out on Noriega
Maillards opened on Noriega in spring 2026, near 45th Avenue and five blocks from the ocean. The name is a chemistry joke, the Maillard reaction being what makes a seared patty taste like anything at all, and the menu is burgers.
The Outer Sunset has picked up a run of small owner-run places over the last few years as rents pushed people west. This end of Noriega is the newest part of that. Take the food to the beach if the fog has burned off, which it often has not.

Second time here! Our first visit was a few weeks after opening, when there was a line out the door and the seating area was very crowded. This time, we came for an early dinner on a Friday around 5 p.m., and there were only a few people in line. Definitely a much easier experience now that they’ve been open for a few months. The burgers were delicious, although they’re on the smaller side, so I’d recommend getting a double or considering two burgers if you’re hungry. I really liked the Bird’s Eye with fried shallots, basil, and Thai chili aioli. It has just a slight kick and is very mildly spicy. The regular and spicy Maillards were also both great. They also have a good selection of beer and drinks on tap, with a separate bar section for ordering. This was convenient when the food line was longer since we could quickly grab drinks without waiting in the food line. Prices were reasonable too. Overall, we love the burgers and drinks here and think it’s a great place to hang out. It can get pretty crowded during peak hours, but coming earlier made for a much more relaxed experience.

Absolutely amazing smash burgers! Crispy and full of quality ingredients. We went later in the evening so the wait wasn’t so long. It’s definitely packed but that only adds to the wonderful welcoming and warm atmosphere. The fries are also amazing! Beer was refreshing and we didn’t try the ice cream but we will definitely be coming back.

one of my new favorites in the city! plenty of indoor and outdoor seating with some amazing food and wide selection of beers. wait times significantly vary but worth waiting up to 30mins. malliards double: well made burger but a little forgettable. the pieces are there but didn’t wow me considering the hype. chicken sandwich: top tier!! chicken was well cooked, juicy and not too oily. batter had tons of flavor and the right amount of spice. fries: solid side but not the star caesar salad: highly recommend! large portions with great flavor and texture

⭐⭐⭐⭐⭐ Absolute 10/10 — Best Smash Burger in SF. Maillards is incredible and completely worth the long wait. I’ve never had anything like it in the city. The Spicy Double: A total masterpiece. The patty has a perfect, crispy Maillard crust, the bun is beautifully toasted, and the sauce delivers the perfect amount of spicy punch. The Fries: Elite. Cooked in beef tallow, making them perfectly crispy on the outside and fluffy on the inside. The Beer: At $3, it is easily the best $3 you can spend in SF. An absolute must-visit if you are in the city.

First time trying this place out. Me and my family love a good burger and let me say this place hit the spot! Now this ain't your regular burger joint. One they offer no drinks (soda) they have beer on tap and milkshake and some type of juices for kids. They have water on tap for everyone to grab their water. I recommend getting here early due to parking and popularity here. They also have outside benches to have your beer or food. Overall great experience. Burger rating 9/10
